Mace is the net-like outer seed covering that envelops the nutmeg seed of the Myristica fragrans tree. The fully ripe fruit splits open on its own, revealing the mace-covered nutmeg seed — the mace, a crimson red thread-like material, is carefully removed and then sun-dried for several days before being sold as whole blades or ground to powder. Mace has a higher concentration of the same essential oils present in nutmeg and therefore has a more intense flavour — and is accordingly much more expensive than nutmeg. Known in Sanskrit as Jatishasya, javitri occupies a rare and rarefied position in the Indian masala dabba — it is the spice that biryani masters, korma cooks, and Mughlai kitchens have always kept close.
